For the Salad:
2 cans of tuna in olive oil, drained
4 hard-boiled eggs, quartered
1 cup green beans, trimmed and blanched
2 cups mixed salad greens
1/2 cup cherry tomatoes, halved (optional, depending on your carb allowance)
1/4 cup black olives, pitted
1/2 red onion, thinly sliced
2 tablespoons capers

For the Dressing:
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 garlic clove, minced
Salt and pepper, to taste

Prepare the Dressing:
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined. Set aside.
