Keto Pizza with Cauliflower Crust Recipe

Ingredients:
For the Cauliflower Crust:
1 medium head cauliflower, riced (about 4 cups)
1 egg, beaten
1/2 cup mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
Salt and pepper, to taste

For the Toppings:
1/2 cup low-carb pizza sauce (check labels for a sugar-free option)
1 cup mozzarella cheese, shredded
1/2 cup pepperoni slices (or toppings of choice)
Additional toppings: bell peppers, onions, mushrooms, olives, etc., as desired
Fresh basil leaves (for garnish)

Instructions:
Prepare the Cauliflower Crust:
Preheat your oven to 400°F (200°C). Line a baking sheet or pizza pan with parchment paper.
Microwave the riced cauliflower in a bowl, covered, for 4-5 minutes. Let it cool, then squeeze out as much moisture as possible using a clean kitchen towel or cheesecloth.
In a bowl, mix the drained cauliflower, egg, mozzarella, Parmesan, Italian seasoning, garlic powder, salt, and pepper until combined.
Spread the cauliflower mixture onto the prepared baking sheet, forming a round pizza crust about 1/4 inch thick.
Bake for 20-25 minutes, or until the crust is golden and firm.

Add Toppings:
Spread the pizza sauce over the baked crust, leaving a small border around the edges. Sprinkle with shredded mozzarella.
Add pepperoni slices and any other desired toppings.

Bake the Pizza:
Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serve:
Garnish with fresh basil leaves. Let the pizza cool for a few minutes before slicing and serving.
