Ingredients:
1 head cauliflower, riced
1/2 cup mixed vegetables (peas, carrots, bell peppers)
2 tbsp soy sauce (or coconut aminos for gluten-free)
1 tbsp sesame oil
Salt and pepper to taste
Instructions: Sauté vegetables in sesame oil, add cauliflower rice, pour in beaten eggs and soy sauce, cook until eggs are set.
