Keto Chicken Gyro Salad Recipe

For the Chicken:
2 boneless, skinless chicken breasts
1 tablespoon olive oil
2 teaspoons dried oregano
1 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper, to taste

For the Tzatziki:
1 cup full-fat Greek yogurt (make sure it's keto-friendly)
1/2 cucumber, grated and drained
2 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon olive oil
Salt and pepper, to taste
Fresh dill, chopped (optional)

For the Salad:
4 cups mixed greens (such as romaine, spinach, and arugula)
1 cucumber, sliced
1/2 red onion, thinly sliced
1/2 cup cherry tomatoes, halved (optional, depending on your carb allowance)
1/4 cup Kalamata olives
1/4 cup feta cheese, crumbled

Marinate and Cook the Chicken:
In a bowl, combine olive oil, oregano, garlic powder, paprika, salt, and pepper. Add the chicken breasts and coat them well with the marinade. Let them sit for at least 30 minutes in the fridge.
Heat a grill pan or skillet over medium-high heat. Grill the chicken for 6-7 minutes on each side or until fully cooked through. Let it rest for a few minutes, then slice thinly.

Prepare the Tzatziki:
