1 lb (450g) large shrimp, peeled and deveined
2 tablespoons olive oil
1 garlic clove, minced
Salt and pepper, to taste

For the Keto Caesar Dressing:
1/2 cup mayonnaise (choose a keto-friendly option)
2 anchovy fillets, minced (or 1 teaspoon anchovy paste)
1 garlic clove, minced
2 tablespoons grated Parmesan cheese
1 tablespoon lemon juice
1 teaspoon Dijon mustard
Salt and pepper, to taste

For the Salad:
6 cups chopped Romaine lettuce
1/4 cup shaved Parmesan cheese
Keto-friendly croutons (optional, you can make these by cubing low-carb bread, tossing with olive oil and baking until crispy)

Grill the Shrimp:
In a bowl, mix the shrimp with olive oil, minced garlic, salt, and pepper until well coated.
Preheat the grill or a grill pan over medium-high heat. Grill the shrimp for 2-3 minutes on each side, or until they are pink and opaque. Set aside to cool.
