Keto Lemon Dill Salmon with Roasted Brussels Sprouts Recipe

For the Salmon:
4 salmon fillets (about 6 oz each)
2 tablespoons olive oil
1 lemon, zest and juice
2 tablespoons fresh dill, chopped (or 2 teaspoons dried dill)
Salt and pepper, to taste

For the Roasted Brussels Sprouts:
1 lb Brussels sprouts, halved
2 tablespoons olive oil
Salt and pepper, to taste
1/2 teaspoon garlic powder (optional)

Preheat the Oven:
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone mat.

Prepare the Brussels Sprouts:
In a large bowl, toss the Brussels sprouts with olive oil, salt, pepper, and garlic powder until evenly coated.
Spread the Brussels sprouts on half of the prepared baking sheet, cut side down.

Roast the Brussels Sprouts:
Place the Brussels sprouts in the preheated oven and roast for about 20-25 minutes, or until they are tender and the edges are crispy.
