4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 tablespoon curry powder
1 teaspoon ground turmeric
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper, to taste
Lemon wedges, for serving

For the Cauliflower Rice:
1 large head of cauliflower, grated or processed into rice-sized pieces
2 tablespoons coconut oil or olive oil
1/2 onion, finely chopped
2 cloves garlic, minced
Salt and pepper, to taste
2 tablespoons fresh cilantro, chopped (for garnish)
1 tablespoon fresh lime juice

Marinate the Chicken:
In a bowl, mix together olive oil, curry powder, turmeric, cumin, garlic powder, onion powder, salt, and pepper. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes in the refrigerator.
