Keto Coconut Flour Waffles Recipe

Keto Coconut Flour Waffles Recipe

1/2 cup coconut flour
1 teaspoon baking powder
1/4 teaspoon salt
4 large eggs
1/2 cup unsalted butter, melted (can also use coconut oil for a dairy-free option)
1/3 cup unsweetened almond milk (or any keto-friendly milk alternative)
2 tablespoons erythritol (or your preferred keto-friendly sweetener)
1 teaspoon vanilla extract

Preheat Your Waffle Iron:
Preheat your waffle maker according to the manufacturer's instructions. Make sure to grease it well with butter or a non-stick spray to prevent sticking.

Mix Dry Ingredients:
In a large mixing bowl, whisk together the coconut flour, baking powder, and salt.

Add Wet Ingredients:
In another bowl, beat the eggs and then mix in the melted butter, almond milk, erythritol, and vanilla extract until well combined.

Combine Wet and Dry Ingredients:
Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter sit for a few minutes to thicken, as coconut flour absorbs a lot of moisture.

Cook the Waffles:
Scoop the appropriate amount of batter into your preheated waffle iron (the amount will depend on your waffle maker) and close the lid. Cook until the waffles are golden and crispy, usually about 5 minutes, but follow your waffle maker’s indicator.

Serve the waffles hot with your choice of keto-friendly toppings, such as sugar-free syrup, whipped cream, or fresh berries.

Enjoy your Keto Coconut Flour Waffles as a delicious start to your day or a satisfying brunch. They're sure to satisfy your waffle cravings without kicking you out of ketosis.
