Keto Cobb Salad Recipe

4 cups mixed salad greens (such as romaine, arugula, and spinach)
2 hard-boiled eggs, peeled and sliced
1 ripe avocado, sliced
4 slices of bacon, cooked and crumbled
1/2 cup cherry tomatoes, halved (optional, depending on your carb allowance)
1/2 cup crumbled blue cheese (or feta cheese if preferred)
1/4 cup red onion, thinly sliced
Grilled chicken breast, diced (optional, for added protein)

For the Keto Dressing:
1/2 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
1 teaspoon erythritol (optional, or your preferred keto-friendly sweetener)
Salt and pepper, to taste
2 tablespoons olive oil
1 teaspoon lemon juice

Prepare the Dressing:
In a small bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, erythritol (if using), salt, pepper, olive oil, and lemon juice until smooth and well combined. Adjust the seasoning to taste.
