Ingredients:
For the Chicken:
For the Keto-friendly Caesar Dressing:
1/2 cup mayonnaise (prefer keto-friendly)
2 cloves garlic, minced
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce (check for a sugar-free version)
1/2 cup grated Parmesan cheese
Salt and pepper, to taste
Anchovy paste (optional, but traditional, adjust to taste)
For the Wrap:
Large lettuce leaves (Romaine or iceberg work well for wrapping)
Shaved Parmesan cheese, for garnish
Additional anchovy fillets (optional)
Freshly ground black pepper
Instructions:
Prepare the Chicken:
Season the chicken breasts with salt and pepper. Heat olive oil in a pan over medium heat and cook the chicken until golden and cooked through. Let it cool before slicing thinly.
Make the Keto-friendly Caesar Dressing:
In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, Dijon mustard, Worcestershire sauce, grated Parmesan cheese, and anchovy paste (if using). Season with salt and pepper to taste. Adjust the ingredients according to your preference.
Assemble the Wraps:
Lay out the lettuce leaves on a flat surface. Place a few slices of chicken in the center of each leaf. Drizzle generously with the keto-friendly Caesar dressing.
Add shaved Parmesan cheese and optional anchovy fillets on top. Sprinkle with freshly ground black pepper.
Wrap and Serve:
Carefully fold the lettuce around the fillings and roll it up to create a wrap. You may use toothpicks to secure the wraps if necessary.
Serve immediately, with extra Caesar dressing on the side for dipping.
