Keto Beef Stir-Fry with Mixed Vegetables Recipe

For the Beef:
1 lb (450g) beef sirloin, thinly sliced against the grain
2 tablespoons olive oil or avocado oil
Salt and pepper, to taste

For the Vegetables:
1 cup broccoli florets
1/2 cup bell peppers, sliced (mix of colors)
1/2 cup snap peas
1/4 cup green onions, chopped
1 small zucchini, sliced

For the Stir-Fry Sauce:
3 tablespoons soy sauce (use tamari for gluten-free)
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 teaspoon erythritol (granulated)
1 clove garlic, minced
1 teaspoon ginger, grated
1/2 teaspoon xanthan gum (optional, for thickening)

Prepare the Stir-Fry Sauce:
In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, erythritol, minced garlic, grated ginger, and xanthan gum (if using). Set aside.

Cook the Beef:
Heat 1 tablespoon of oil in a large skillet or wok over high heat. Season the sliced beef with salt and pepper. Add the beef to the skillet and stir-fry until it's browned and cooked through, about 3-4 minutes. Remove the beef from the skillet and set aside.

Stir-Fry the Vegetables:
In the same skillet, add the remaining tablespoon of oil. Add the broccoli, bell peppers, snap peas, green onions, and zucchini. Stir-fry the vegetables for about 4-5 minutes until they're just tender but still crisp.

Combine Beef and Vegetables:
Return the cooked beef to the skillet with the vegetables. Pour the stir-fry sauce over the top and toss everything together to coat well. Cook for an additional 1-2 minutes to heat through and thicken the sauce slightly.

Serve the beef stir-fry immediately, garnished with sesame seeds or additional green onions if desired.
