2 cups cauliflower rice (from about 1 medium head of cauliflower)
2 tablespoons cream cheese, softened
1 tablespoon mayonnaise

4 nori sheets
4 ounces smoked salmon, thinly sliced
1 avocado, sliced
1/2 cucumber, julienned (optional for extra crunch)

Prepare the Cauliflower Rice:
Pulse the cauliflower florets in a food processor until it resembles rice. Microwave the cauliflower rice for about 2-3 minutes, then let it cool. Squeeze out any excess moisture using a clean kitchen towel.
